Bavarian Inn Cranberry Muffins Recipe

Ingredients

  • 1 3/4 c. sifted flour
  • 3/4 tsp salt
  • 1/4 c. sugar (to taste) (1/4 to 1/2)
  • 2 tsp baking pwdr
  • 2 x Large eggs
  • 3/4 c. lowfat milk
  • 2 Tbsp. melted butter (2 to 4)
  • 1 c. minced fresh or possibly frzn cranberries
  • 1 tsp grated orange rind
  • 1 c. minced pecans

Directions

  1. Combine flour, salt, sugar and baking pwdr in bowl. In separate bowl, beat Large eggs. Add in lowfat milk and butter to Large eggs. Gradually fold egg mix into flour mix. Before batter is completely mixed, add in cranberries, orange rind and pecans; mix completely. Fill 24 well-greased muffin c. two-thirds full. Bake 20 to 25 min or possibly till muffins test done.
  2. Makes 24.
