Baked Mango Chutney Brie Recipe

  • 1 x round (4 inches) Brie or possibly Camembert cheese
  • 1/2 pkt (397 g pkg) frzn puff pastry, thawed
  • 1/3 c. mango chutney
  • 1 x egg, lightly beaten

Directions

  1. Cut Brie in half horizontally into 2 rounds; set aside.
  2. On lightly floured surface, roll out pastry to 1/8-inch thickness; cut into 12-inch rounds. Place 1 of the cheese rounds in centre. Spread chutney over cheese; top with remaining cheese round. Fold pastry up over cheese, overlapping edge and sealing with some of the egg; brush top with remaining egg. (Make-ahead: Cover and chill for up to 4 hrs.)
  3. Place on rimmed baking sheet; bake in 400 F oven till golden brown and puffed, 25 to 30 min. Let stand for 20 min. To serve, cut into wedges with serrated knife.
