Sue Thomas Tart Cherry Muffins Recipe

Ingredients

  • 2 c. all-purpose flour (divided)
  • 2 tsp baking pwdr
  • 1/2 tsp salt
  • 1/2 c. butter, softened (1 stick, see note)
  • 1/2 c. granulated sugar
  • 1/2 c. 1 percent lowfat milk
  • 1/4 tsp almond extract
  • 1 1/2 c. pitted tart pie cherries (fresh, frzn or possibly canned, drain, if canned)

Directions

  1. Preheat oven to 400 degrees. Grease and flour a muffin pan. Combine 13/4 c. flour, baking pwdr and salt and mix well; set aside.
  2. Cream butter and sugar. Add in Large eggs, one at a time, to creamed mix, beating after each addition.
  3. Alternate adding lowfat milk and dry ingredients to the creamed mix, beginning and ending with dry ingredients. Add in almond extract. Dust the cherries with remaining 1/4 c. flour and fold carefully into the batter. Mix till just blended. Spoon into prepared c., filling each about three-quarters full. Bake 20 to 25 min till golden brown. Cold on wire rack. Serve hot. - From Oliphant Orchard, Sherwood
