Spinach Basil Orzo Recipe

Can you believe I *just* discovered Orzo about 2 months ago? I'm officially a huge fan and this is one of the many recipes I've come up with using a pasta that is in my top 3 faves.

Directions

  1. Bring 4 cups water to a boil, add orzo, boil for about 7 minutes or until al dente. While water boils and orzo cooks, heat a small frying pan over medium heat and add pine nuts. Toss pine nuts around in pan until light brown, this happens pretty fast so don't walk away from this. When orzo is done drain and return to pot. Add pine nuts, olive oil, lemon juice, basil, spinach, garlic, Parmesan cheese and salt. Mix well, serve hot.
