Lentil Soup (Ridiculously Easy) Recipe

Ingredients

  • 1 1/2 c. lentils (not red)
  • 7 c. water
  • 1 med yellow onion minced
  • 3 x cloves garlic chopped or possibly pressed (to 5)
  • 1 Tbsp. extra virgin olive oil
  • 1 tsp salt freshly grnd black pepper juice of one lemon

Directions

  1. Bring the lentils and water to a boil in a large soup pot, then reduce heat and simmer. When the lentils have cooked for about 40 min, saute/fry the onion and garlic in the extra virgin olive oil till the onion is soft, then add in the mix to the lentils, along with the salt and plenty of black pepper. Simmer for another 30 min or possibly so. Just before serving, add in about half the lemon juice, then taste to see whether you want to add in the rest. Add in more salt and/or possibly pepper if desired.
  2. This is a very simple and soothing soup.
