Linguine And Shrimp With Butter Sauce Recipe

Ingredients

  • 16 ounce linguine, or possibly other long pasta
  • 1 c. LAND O LAKES(r) Butter
  • 2 Tbsp. minced green onions
  • 2 Tbsp. white wine
  • 1 c. spinach, rinsed and stemmed
  • 1 x tomato, minced
  • 1 c. sliced mushrooms
  • 2 Tbsp. minced fresh basil
  • 2 lb shrimp, peeled and deveined

Directions

  1. Prepare linguine according to the package directions; drain.
  2. Meanwhile, in a large skillet heat butter and add in green onions and white wine. Cook till liquid is reduced, but don't brown, about 3 min.
  3. In a medium saucepan over medium-low heat steam spinach in a small amount of salted water till wilted; remove and drain. Add in to butter mix.
  4. Stir in pasta, tomato, mushroom, basil and shrimp. Toss till well mixed and cook till shrimp is pink, 3 to 5 min. Serve immediately to prevent the shrimp from getting tough.
