  • 1 lb grnd beef
  • 1 x onion minced
  • 1 can diced tomatoes - (14 1/2 ounce)
  • 2 Tbsp. tomato paste
  • 1 x beef bouillon cube
  • 1 1/2 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp freshly-grnd black pepper
  • 1/4 tsp cayenne pepper
  • 1 pkt mini lasagna noodles - (8 ounce) cooked and liquid removed
  • 2 Tbsp. butter or possibly margarine melted
  • 3 Tbsp. all-purpose flour
  • 1 tsp salt
  • 1/4 tsp freshly-grnd black pepper
  • 2 c. lowfat milk
  • 2 c. shredded mozzarella cheese divided

Directions

  1. Cook lasagna noodles in boiling water for 5 min. Drain. In a skillet, brown grnd beef and onion, till onion is tender. Drain fat. Transfer meat mix to crockpot. Stir in tomatoes, tomato paste, bouillon, and seasonings. Add in cooked lasagna noodles.
  2. In a small bowl, mix melted margarine, flour, salt, pepper, lowfat milk, and 1 c. of mozzarella cheese. Stir into crockpot. Cover and cook on LOW 4 to 6 hrs or possibly on HIGH 2 to 3 hrs.
  3. In the last 30 min, turn crockpot to HIGH, if cooking on LOW. Top with remainder of mozzarella cheese. Serve when cheese is melted.
  4. This recipe yields 10 to 12 servings.
