Ingredients

  • 2 x egg whites
  • 3/4 c. sugar
  • 1 pch salt
  • 1/2 tsp vanilla
  • 6 ounce chocolate chips mint
  • 1 dsh green food coloring or possibly more

Directions

  1. The Raspberry Meringue Cookies which were discussed on the list last week aresimilar to the following cookies that I have made every Christmas for 35 years. These cookies do not spread, need to be left in the oven ALL night, and freeze beautifully. Do not leave the mint chocolate chips out of them because they add in pizzazz.
  2. Preheat oven to 350 degrees. Beat egg whites till they hold soft peaks.
  3. While constantly beating, gradually add in sugar, and continue beating till stiff peaks form. Mix in one drop green food coloring, vanilla, chips, and salt. Place on ungreased cookie sheet. (Use parchment paper if available.)
  4. Turn oven off as you put the cookies in. Leave in overnight.
  5. Can be frzn.
