Directions

  1. Remove the favas from their pods and rinse. Then dump them into a 9-inch glass pie dish and add the stock, garlic, vinegar, oregano, bay leaf and onion rings. Cover with vented plastic wrap and microwave on full power till tender, 8 1/2 to 9 min, stirring midway.
  2. Immediately stir in the extra virgin olive oil, lemon juice, pepper and Parmesan and let stand for 5 min.
  3. Serve scooped on crusty Italian bread after removing bay leaf.
  4. Serving Ideas : Serve as spread on bread. For a light entree, toss favas with pasta and minced ripe tomatoes.
  5. NOTES : Fresh Fava beans come in big khaki pods, usually six beans to a pod. Split the pods open and you'll find big light green beans, each with a little brown smile. If you cannot find fresh favas, substitute 12 ounces (340g) of rinsed, canned favas and shorten the cooking time to 3 to 3+1/2 min.
