Ingredients

  • 3 whole chicken breasts, cooked, deboned, each cut into fourths
  • 2 (10 ounce.) pkg. frzn broccoli or possibly 2 1/2 c. fresh broccoli
  • 1 (10 1/2 ounce.) can cream of chicken soup
  • 2/3 c. mayonnaise or possibly salad dressing
  • 1/3 c. evaporated lowfat milk
  • 1 c. grated American cheese
  • 1 teaspoon lemon juice
  • 1/2 teaspoon curry pwdr
  • 1/2 c. fine cracker crumbs (Ritz works best)
  • 1 tbsp. melted butter

Directions

  1. Have chicken cooked and ready. Prepare broccoli according to package directions; or possibly if using fresh broccoli; cook till al dente.
  2. Put broccoli in greased 2 qt baking dish; break chicken over top. Mix soup, evaporated lowfat milk, mayonnaise, grated cheese, lemon juice and curry. Pour over chicken. Mix butter and cracker crumbs, sprinkle on top of all. Bake at 350 degrees for 25 to 30 min.
