Ingredients

  • Ingredients:
  • 1 cup chopped, red onions
  • 3 large cloves garlic, chopped
  • 1 tbsp. oil (I used coconut, but any oil you have will do.)
  • 4 cups chicken broth, low sodium
  • 1 lb. cherry tomatoes (I used red and yellow)
  • 2 cups chopped broccoli
  • 2 cups sliced baby carrots
  • 1 tsp. dried parsley (or 1 tbsp. fresh)
  • 1 tsp. dried basil (or 1 tbsp. fresh)
  • 1 bay leaf
  • 1/2 tsp. dried rosemary (or 1/2 tbsp. fresh, chopped fine)
  • Salt and pepper to taste
