  • 4 lrg Potatoes -- diced
  • 1 lrg Onion -- diced
  • 3 stalk Celery -- diced
  • 1 lrg Carrot -- diced
  • 1/2 tsp Salt
  • 12 ounce Evaporated Skim Lowfat milk
  • 2 Tbsp. Butter Pepper -- to taste

Directions

  1. Place first 5 ingredients in a 4 qt saucepan. Cover with water & boil gently till carrots are soft. Don't drain - mash together so which you have a lumpy mush.
  2. Add in lowfat milk, margarine and pepper. Cook till warmed through.
