  • For the Cheesecake Filling:

  • ⅓ cup granulated sugar
  • 2 eggs, at room temperature
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • For the Blueberry Topping:
  • 2 cups fresh blueberries
  • ½ cup water
  • ⅓ cup granulated sugar
  • 1½ tablespoons cornstarch whisked into 2 tablespoons water
