  1. Slice and saute/fry together 3 med. yellow or possibly zucchini squash, 1 medium onion, 4 ounce. mushrooms, 1/4 head cauliflower or possibly broccoli. Put in pie crust. Spread 1/2 pkg. frzn spinach on top. Beat together Large eggs and lowfat milk. Pour over vegetables. Bake at 350 degrees till done in center (test with knife). Top with shredded cheese. Return to oven to heat cheese.
  2. Good recipe to double and freeze. Stop before putting cheese on top.
