Up-side Down Pineapple Cake Recipe

Very simple pineapple cake. Just to be frank, I use to make this cake for my parent's birthdays when I was ten.

Ingredients

Directions

  1. In a blender mix eggs, oil, milk, pineapple juice, sugar, vanilla, and salt.
  2. Pour mixture into a bowl where the flour and baking powder have already been mixed.
  3. In a greased pan lined with parchment paper, distribute the pineapple and pecans evenly.
  4. Place small chunks of butter evenly around the pineapple and pecans.
  5. Sprinkle the brown sugar on top of the pineapple and pecans.
  6. Pour the dough into the cake pan, and shake the cake pan in order to avoid air bubbles.
  7. Bake for 20 minutes in a 350 degree oven.
  8. After baking, allow to chill before flipping the cake over.

    I made this cake and it takes two cake pans or a 13x9. I am gonna have to remake this cause i realized to late it would be for two pans. silly me. but, the cake and topping were great. I gave it a 3.5 cause there was a better receipe that was vegan but this was still great. and I love the fact the ingredents are so easy. I had all the stuff in the house and that was awesome. I also had to use a mixer cause i dont have a blender right now. and I didnt add as much brown sugar cause i thought for one pan that was too much. thank God I didnt but duh to me for not realizing it would take two pans and i should of saved half my pineapples to do this. but, after it rose like two towers high i just kind of ate part of the top cake and then mushed it all together and recooked. so all batter had a chance to make it. LOL. kids loved it.
    I've cooked/tasted this recipe!
