PB&J Ice Cream Sandwiches Recipe

Fun new twist on the typical Ice Cream Sandwich.

  1. Preheat oven at 350 degrees
  2. Combine the peanut butter, sugar, egg, and vanilla in a bowl.
  3. Once the dough has come together, form small balls about the size of a large walnut.
  4. Roll the balls in granulated sugar and place them on a greased cookie sheet.
  5. With a fork, push down on the balls to create cris-cross creases.
  6. Bake the cookies for about 12 minutes.
  7. Once you have removed them from the oven; sprinkle a bit more sugar on top of the cookies and allow them to cool.
  8. Once they have cooled, you can begin to assemble the sandwiches.
  9. Put jam on one end of a cookie, and scoop strawberry ice cream onto another cookie, and sandwich the two together.
  10. Roll the sides in the peanut butter chips. You can also roll the sandwiches with chopped peanuts.
  11. Once you have assembled the sandwiches, freeze them for about thirty minutes.

      The cookies are great...and EASY. It was hard to make the ice cream work though. The sandwiches were a little messy and the cookie-to-ice cream ratio was a little high. I would recommend buying the ice cream in a box, make sure it's frozen solid, then break the whole box open, and cut the ice cream into the right size and shape.
      I've cooked/tasted this recipe!
