Nidos de Pajaro "Bird's Nests Cookies" Recipe

Yet another family recipe of mine. They really are one of a kind, delicious, and another way to get the kids in the kitchen. They look very elegant and make for a decadent gift as well.

Directions

  1. With a blend mix the butter (room temperature), with the sugar, and vanilla.
  2. Mix in only the egg yolks saving the whites in a separate container.
  3. Add the flour, baking powder, and salt into the mix.
  4. Form small cookie balls about the size of a bouncy ball.
  5. Dip each cookie into the egg whites and roll them around in the nuts and place them onto a greased cookies sheet.
  6. Bake them for 5 minutes at 350 degrees.
  7. After the five minutes pull the cookies out and with your finger make an imprint in the center of the cookie so that it resembles a bird's nest.
  8. Return the cookies to the oven and bake for another 10-15 minutes.
  9. Once the cookies have been removed form the oven, fill the nest with jam/jelly.

      I made these cookies using the ingredients listed above and they didn't taste good, we ended up throwing them out. I think the recipe should have called for only 4 teaspoons of baking powder not 4 tablespoons. The vanilla also was written as 1 tablespoon and it should be 1 teaspoon. thanks, connie
