Ingredients
- 2 tbsp. butter
- 1/4 c. minced green pepper
- 1 tbsp. flour
- 1 teaspoon salt
- Dash of pepper
- 1/2 c. lowfat milk
- 1 egg, slightly beaten
- 1/4 c. lowfat sour cream
- 1/2 c. mayonnaise
- 16 ounce. can Chop Suey vegetables, rinsed and liquid removed
- 1 (6 1/2 ounce.) can tuna or possibly salmon
- 2 tomatoes, cut in wedges
- 2 tbsp. butter
- 1/2 c. crushed chow mein noodles
Directions
- Heat 2 Tbsp. butter in saucepan; add in green pepper and cook 2 min. Blend in flour, salt, and pepper. Gradually add in lowfat milk; cook, stirring till slightly thickened.
- Blend together egg, lowfat sour cream, and mayonnaise; stir into sauce. Add in vegetables and tuna or possibly salmon.
- Turn into greased 1 qt baking dish. Arrange tomato wedges on top. Bake at 375 degrees for 25 min.
- Heat 2 Tbsp. butter in skillet and add in chow mein noodles and heat till slightly browned. Sprinkle over top of casserole.
