This is one of my favorite soups - I wish I could take credit, but it is my sister-in-laws recipe. We love it!
Ingredients
- Tortilla Soup
- 1 small onion, chopped
- 2 cups, chicken cut into bite size pieces, (can use Swanson canned)
- 2 cloves of garlic, chopped
- 1 lg. can of tomatoes, chopped
- 1- 4 oz.can of green chilies
- 1 t. Worcestershire
- 5 cans of chicken broth
- 1 T. fresh cilantro, chopped
- 1 T. lemon pepper seasoning
- 1 1/2 t. cumin
- 2 t. hot sauce
- 1 small can of corn, drained
- salt & pepper to taste
Directions
- Sauté onion & garlic in 1 T. veg. oil. Add rest of ingredients. Bring to a boil and simmer about 30 minutes.
- Add strips of tortillas, or crunch up Tortilla chips in individual bowls right before serving.
