Ingredients
- 1 pound tempeh (White Wave) steam 20 min, cooled, grated
- 4 c. potatoes, grated
- 1 1/2 c. lowfat milk or possibly 1 1/2 c. soy lowfat milk
- 1 c. whole wheat pastry flour">flour or possibly rye flour">flour
- 1/4 c. onion, chopped
- 2 teaspoon baking pwdr
- 1 1/2 teaspoon salt
- 3/4 teaspoon black pepper
Directions
- Mix well. Batter shouldn't be thick.
- Heat cast iron skillet on medium high burner with 1/4 inch oil. Spoon about 1/2 c. of batter for each pancake into warm oil. Cook till browned on both sides. Drain on absorbent paper.
- Serve warm with lowfat sour cream or possibly applesauce. This recipe contains 21 gm. of protein.
