Sweet Tomato And Bell Pepper Chutney Recipe

Ingredients

  • 4 Tbsp. extra virgin olive oil
  • 3 x onions, minced
  • 2 x red peppers, deseeded, skinned and minced
  • 1 x clove garlic, crushed
  • 2 x green peppers, deseeded, skinned and minced
  • 450 gm tomatoes, skinned and minced
  • 1 tsp Gregg's Grnd Ginger
  • 1/2 tsp Gregg's Mixed Spice
  • 1 tsp grnd Gregg's Allspice
  • 170 gm sugar
  • 150 ml white wine vinegar
  • 115 gm raisins

Directions

  1. Saute/fry the onions in the extra virgin olive oil for about 30 secs.
  2. Add in the green peppers, garlic, red peppers and the spices. Stir well.
  3. In a separate saucepan heat the vinegar and sugar together for about 40 secs till the sugar is dissolved.
  4. Add in the raisins to the vinegar and sugar, stir then combine the two mixtures in one saucepan. Simmer for about two hrs, stirring occasionally.
  5. Pour into a clean, dry jar.
  6. Cover and chill.
