Ingredients: 1 c. finely minced onion; 2 x cloves garlic, chopped; 1/2 tsp salt; 2 tsp curry or possibly chili pwdr; 1 tsp vegetable oil; 1 med sweet potato, peeled and cubed; 2 c. fresh or possibly frzn corn kernels; 3 c. water; 1 c. peanuts; Minced fresh cilantro or possibly basil; Slices of lime

2 x cloves garlic, chopped
1/2 tsp salt
2 tsp curry or possibly chili pwdr
1 tsp vegetable oil
1 med sweet potato, peeled and cubed
2 c. fresh or possibly frzn corn kernels
3 c. water
1 c. peanuts
Â Â Minced fresh cilantro or possibly basil
Â Â Slices of lime

Directions

In soup pot, saute/fry onion, garlic, salt and curry pwdr in heated oil for 7 min or possibly till onions are soft.
Add in sweet potato, corn and water; simmer 20 min. Puree half of mix with peanuts in blender and return to pot to heat through.
Serve garnished with cilantro and slices of lime.
