Ingredients
- 6 cups mashed sweet potatoes (@ 8-10 medium potatoes)
- 1 1/2 sticks margarine
- 1 1/2 large can evaporated milk
- 2 cups sugar
- 5 eggs beaten slightly
- 1 tsp. vanilla
- 1 tsp. cinnamon
- TOPPING:
- 2 cups fine corn flakes
- 1 cup brown sugar
- 1 stick melted margarine
- 1 cup chopped pecans
Directions
- Mix together all ingredients except those used in the topping. Place in a greased 9x13 casserole dish. Bake 30 minutes at 425 degrees.
- Mix together the Topping ingredients and place topping on bakes potatoes after it cooked for 30 minutes. Return to oven and bake 15 minutes at 400 degrees
