  • 1 pkt Cellophane noodles - (3 1/2 ounce)
  • 2 Tbsp. Vegetable oil
  • 2 Tbsp. Minced shallots
  • 1 c. Thinly-sliced snow peas
  • 1 ounce Dry tree ear mushrooms reconstituted in
  •     water
  • 2 tsp Minced garlic
  • 1 c. Bean sprouts - (packed)
  •     Fish sauce (nuoc mam) to taste
  •     Freshly-grnd black pepper to taste
  • 1/2 lb Fresh crab meat cartilage removed
  • 1/4 c. Minced green onions

Directions

  1. Place the noodles in a large bowl. Cover with hot water and allow to sit for 20 min. Drain and pat dry.
  2. In a wok, over medium heat, add in the oil. When the oil is warm, add in the shallots, peas, mushrooms, garlic and bean sprouts. Season with the fish sauce and black pepper. Stir-fry for 1 minute. Add in the crabmeat. Season with the fish sauce and black pepper. Continue to stir-fry for 2 min. Add in the noodles and green onions. Stir-fry for 1 minute. Remove and serve on a large platter.
  3. This recipe yields 4 servings.
