Spicy Honey Lime Shrimp with Tropical Couscous Recipe

Sweet spicy shrimp served with coscous with a tropical twist.

  • For the Shrimp:
  • 16 shrimp
  • 1/4 c lime juice
  • 1/4 c honey
  • 1/4 to 1/2 tsp hot sauce, or to taste
  • For the Couscous:
  • Make couscous according to package, but substitute 1/4 to 1/3 of liquid with orange, lime or lemon juice
  • 1 tbs shredded coconut
  • 1 tbs almonds, finely chopped or slivered almonds
  • 1 tsp zest lemon, lime or orange
  • 2 to 3 oranges, limes or lemons, cut into sections If using oranges you may want to only use 1 and cut sections in 1/2

Directions

  1. For the shrimp: mix ingredients together in a bowl or resealable plastic bag. Add the shrimp to the bag and allow them to marinade. Don't leave them in the bag for more than 1/2 hour, you don't want the acid to cook the shrimp. After they are done marinading grill them for 2 to 3 minutes per side.
  2. For the couscous add the coconut, almonds and zest and mix it in. Top with the fruit sections and shrimp. You can sprinkle additional almonds and coconut on top as a garnish.
