Ingredients
- 2 x Baked potatoes
- 4 slc Bacon, cooked and crumbled
- Â Â Reserved bacon drippings
- 1 med Onion, minced
- 1 c. Cooked turnip, mashed
- Â Â Salt and pepper
- Â Â Parsley, minced
Directions
- This is from a wonderful little cookbook, Stuffed Spuds. The combination of turnip and potato is outstanding.
- Cut a thin slice from the top of each potato. Remove pulp, mash; cover and set aside. Keep shells hot. In drippings, cook onion till tender. Add in bacon to potato. Add in turnip, salt and pepper; mix well. Add in to onion mix in skillet and heat. Heap into shells. Garnish with parsley.
