Ingredients

  • 3 c. cooked peeled shrimp - (to 4 c.)
  • 1 box Uncle Ben's long-grain and wild rice (6 ounce)
  • 1 can cream of chicken soup
  • 1 sm can liquid removed mushrooms
  •     Minced celery
  •     Minced onion
  •     Minced bell pepper
  • 3/4 stk margarine
  •     Crumbled Ritz crackers

Directions

  1. Cook rice as directed. Saute/fry onion, bell pepper and celery in margarine. Mix all ingredients well and spread into a flat 2-qt (9- by 13-inch) dish. Cover with crumbled Ritz crackers.
  2. Bake till bubbly at 350 degrees. Serve with salad.
