Directions

  1. Heat oil in a wok. Add in shrimp, onion, carrot, celery, cabbage, and water chestnuts and stir fry. Add in sesame oil, soy sauce, rice wine vinegar, sugar, salt and pepper. Cold.
  2. Lay out one dumpling wrapper, brush the edge with water and put 1 teaspoon of filling into middle of the wrapper. Fold the edge over to create a packet. Dust with a light coating of cornstarch to prevent sticking before cooking. Dumplings may be frzn at this point.
  3. Oil and set up a steam rack in the wok and heat 1 c. water to a boil.
  4. Place the dumplings on the rack, and steam till they become translucent/soft, about 3 min. Remove and proceed to the skillet cooking process.
  5. Heat a non-stick skillet with 3 Tbsp oil. Cook both sides of dumplings till browned. Keep hot in a low oven. Serve with Sweet Mustard Dip.
  6. Sweet Mustard Dip:Combine and heat in a saucepan over low heat. Cook to blend flavors.
  7. Cold till just hot.
