Ingredients
- 150 gm Original camargue red rice
- 2 x Chillies, finely sliced
- 2 x Mini pitta breads, finely minced
- 3 Tbsp. Extra virgin olive oil
- 1 handf radish leaves, rinsed and roughly minced
- 1 x Lime
- 1 x Lemon
- Â Â Salt & pepper
Directions
- 1 Fill a third of a pressure cooker with boiling water. Pour in the rice and cook on full for 15-18 min.
- 2 When the red button pops up on the pressure cooker, release the steam.
- Drain the rice and mix it in a bowl with the chillies and pitta bread.
- 3 Add in the extra virgin olive oil, radish leaves and the zest and juice of the lemon and lime. Season to taste.
