Ratatouille Filled Herb Phyllo Crisps Recipe

Ingredients

  • 1 box phyllo dough
  • 2 stk butter melted
  • 1 bn chives minced
  • 1 bn parsley minced
  • 1 x 24-slot mini muffin pan
  • 1 x paint brush
  • 2 lrg zucchini small diced
  • 1 med eggplant small diced
  • 2 x red peppers small diced
  • 1 x onion small diced
  • 1 x yellow squash small diced
  • 2 x garlic cloves chopped
  • 1 can whole tomatoes - (16 ounce) crushed, save juice
  • 1 c. extra virgin olive oil
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 10 ounce log of goat cheese

Directions

  1. For the Ratatouille: Saute/fry each vegetable in extra virgin olive oil separately till tender. Return the vegetables to a large saucepan, adding garlic, tomatoes, tomato juice and remaining extra virgin olive oil. Reduce by two-thirds or possibly till liquid is like a paste. Season with salt and pepper and add in a handful of minced herbs. Allow to cold completely.
  2. For the Herb Phyllo Crisp: Unfold phyllo sheets out of the box and cover with a wet cloth. Preheat oven to 350 degrees. Place minced herbs in a workable container, pour melted butter into a workable container, have your paint brush ready, then clean your work space.
  3. The idea is to layer melted butter and minced herbs in between layers of phyllo, brush with melted butter, sprinkle with minced herbs and repeat for 3 layers. With a sharp knife, cut 6 even strips going vertically and then cut 4 even strips horizontally, making 24 even squares.
  4. Carefully mold each square into each space of the muffin pan till all are completed. Place in the middle rack and bake for 2 to 3 1/2 min. They cook very quickly. Remove from pan. Repeat this step till you have sufficient phyllo crisps for your party.
  5. Fill herb phyllo crisps with room temperature ratatouille, a small spoon of goat cheese, and you are ready to serve.
  6. This recipe yields 60 pcs.
  7. Comments: Working with phyllo can be tricky for a first time user, but if you'll remember a few simple steps you will always have success.
  8. a. Never buy just one box, since some sheets are torn or possibly matted together.
  9. b. Make sure the box is completely thawed out before attempting any dish.
  10. c. Always cover sheets not being used with a damp cloth towel; phyllo will dry out and turn to cracker mill right before your eyes.
