Ingredients: 6 to 8 large potatoes, peeled, cooked and mashed; 1 c. lowfat sour cream; 2 teaspoon salt; 1/4 teaspoon pepper; 2 tbsp. minced chives or possibly onion tops; 1/4 c. butter; 1 (10 ounce.) spinach, thawed and liquid removed; 1 c. shredded Cheddar cheese

2 tbsp. minced chives or possibly onion tops
1/4 c. butter

Directions

Combine all ingredients, except cheese, and bake at 400 degrees for 15 min. Top with cheese and bake 5 min longer.
