Ingredients
- 1 lb Black-Eyed Peas
- 5 lbs Pork Bacon
- 1 cup Spanish Onions
- 1 cup Red Peppers
- 1 cup Black Olives
- 1/2 cup Dry Oregano
- 1/2 cup Fresh Parsley
- Salt & Pepper
- 20 ech lettuce leaves
- 5 lbs tomato
- 1 cup red win vinegar
- 2 cups olive oil.
- 1/4 cup whole peeled garlic
- 1/4 cup dijon mustard
- 1/4 cup sugar
- 20 ech garlic herb wrap
Directions
- Combine peas, onions, red pepper. olives, oregano, and parsley in a large bowl.
- For the dressing: Add all ingredients into small bowl.
- Whisk ingredients together using a wire whip for about one minute.
- Season with salt and pepper, then spoon over salad.
- Place garlic herb wrap on work surface.
- Spread 3 oz of Bean and Bacon mixture on bottom half of wrap.
- Add 3 slices of pork bacon, top with lettuce leaves, sliced tomato and proceed to roll wrap from the bottom half to the top.
- Seal the wrap and slice in half on the bias.
