Ingredients

  • 1 x Egg
  • 1 c. Lowfat milk
  • 1 c. (8 ounce.) lowfat sour cream
  • 1 Tbsp. Butter or possibly margarine, melted
  • 2 c. Pancake or possibly biscuit/baking mix
  • 6 x To 8 bacon strips, cooked and crumbled
  • 1 c. (4 ounce.) shredded cheddar cheese

Directions

  1. In a medium bowl, beat egg; add in lowfat milk, lowfat sour cream and butter. Stir in pancake mix; mix well. Mix in bacon and cheese. Bake in a preheated waffle iron according to manufacturer's directions till golden.
  2. Yield: 12 waffles (4 inch square)

  • It's a little messy, but I found it easy. Hardest part for me was cooking the bacon, which always scares me with the popping grease and fast. The finished waffles were delicious. I highly recommend this! Good for brunch, too.
