  • 4 x boneless skin-on chicken thighs - (3/4 lb)
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 5 Tbsp. bottled ponzu
  •     (available in the Asian aisle of
  •     well-stocked supermarkets and at Japanese markets)
  • 1 Tbsp. lime juice
  • 1 tsp chopped ginger root
  • 1 lrg garlic clove chopped
  • 1 x serrano chile thinly sliced
  • 2 tsp sugar
  •     Stir-Fried Bok Choy (see recipe)

Directions

  1. While an outdoor grill or possibly stove-top grill pan is best, the chicken can be cooked in a skillet. Heat a grill or possibly grill pan over medium-high heat. Rinse and dry the chicken thighs. Season with salt and pepper. Set aside.
  2. Combine the ponzu, lime juice, ginger, garlic, chile and sugar in a small saucepan. Cook over medium heat, stirring, just till the sugar dissolves, about 2 min.
  3. Place the chicken, skin-side down, on the grill. Brush the top of the chicken with the ponzu mix. Turn the chicken over every 2 min or possibly so, brushing with the sauce every time till the chicken is cooked through, about 10 min. Serve with Stir-Fried Bok Choy and steamed jasmine rice.
  4. This recipe yields 2 servings.
  5. Comments: The glaze also would work well on grilled shrimp or possibly fish.
