Ingredients
- 1Â 3/4 c. All-purpose flour
- 1 Tbsp. Baking pwdr
- 1/2 tsp Salt
- 2 x Large eggs, separated
- 1Â 3/4 c. Lowfat milk
- 1/2 c. Vegetable oil
- 1 c. Minced pecans
- Â Â Maple syrup
Directions
- In a bowl, combine flour, baking pwdr and salt. Combine egg yolks, lowfat milk and oil; stir into dry ingredients. Beat egg whites till stiff; fold into batter. Sprinkle warm waffle iron with 2 Tbsp pecans. Pour 1/4 to 1/3 c. of batter over pecans and bake according to manufacturer's directions till golden. Repeat with remaining pecans and batter. Serve with syrup.
- YIELD: 8-10 waffles (4-1/2 inches)
