Ingredients

  • 2 pkt (9 ounces each) Simple Sweets Chocolate Chip cookies, crushed
  • 2 1/2 c. (5 sticks) melted butter (divided)
  • 6 c. Grain-sweetened chocolate chips, (about 3 1/2 10-oz bags) (divided)
  • 1 c. Skim lowfat milk, (divided)
  • 2 1/2 c. Smooth unsweetened, (organic if possible) peanut butter
  • 1 c. Granulated fructose
  • 1 Tbsp. Vanilla extract

Directions

  1. Combine cookie crumbs with 1 1/2 c. melted butter in bowl. Press into 13-by-9-inch pan which has been coated with vegetable oil spray.
  2. In another, microwave-safe bowl, heat 3 c. chocolate chips with 1/2 c. skim lowfat milk on high (100% power) in microwave oven. Pour mix over crust in pan and freeze till hard or possibly refrigerateovernight.
  3. Combine peanut butter, remaining 1 c. melted butter, fructose and vanilla in bowl. Spread over chocolate layer and refrigerateat least 5 min. Heat remaining 3 c. chocolate chips with remaining 1/2 c. skim lowfat milk. Pour over peanut butter mix and refrigerateovernight. Cut into bars.
  4. Makes 36bars.
