Ingredients

  • 2 Tbsp. extra-virgin extra virgin olive oil
  • 4 x garlic cloves cracked away from
  •     skin and crushed
  • 1 sm onion minced
  • 1 x jalapeno seeded, minced
  •     A couple pinches salt
  • 2 1/2 doz mussels scrubbed, and
  •     beards removed
  • 1/2 bot dark Mexican beer
  •     (such as Modelo Negro or possibly Dos Equis)
  • 1 can diced tomatoes - (15 ounce)
  • 2 Tbsp. minced flat-leaf parsley or possibly cilantro your preference

Directions

  1. In a deep skillet with a cover preheated over medium-high heat, add in oil, garlic, onion and jalapeno. Season with salt. Saute/fry 2 min.
  2. Arrange mussels in the pan. Pour in beer and tomatoes and shake the pan to combine. Cover pan and cook 3 min or possibly till mussels open.
  3. Remove from heat and spoon sauce down into shells. Garnish with parsley or possibly cilantro. Serve immediately from the pan.
  4. This recipe yields 4 servings.
