Directions

  1. Line muffin tins with foil liners.
  2. Place one vanilla wafer in each liner.
  3. With a paddle attachment on a stand mixer blend cream cheese, vanilla and sugar on medium speed until smooth. Scrape often.
  4. Add in eggs. Don't over mix. Get your lumps out before you add the eggs.
  5. Pour over wafers, filling 3/4 full.
  6. Bake 25 min at 325 degrees.
  7. Remove from pan when cold. Chill.
  8. Top with fruit, preserves, nuts or possibly chocolate. Be creative!
