Ingredients
- 2 c. Graham cracker crumbs
- 1 1/2 c. Mincemeat
- 1 can Eagle Brand sweetened condensed lowfat milk
Directions
- Here is a recipe which I tried this year for the first time. The result is a spicy, moist, dense cake which freezes well. This has been popular with friends and family. It's unbelievably easy.
- Mix ingredients together well. Spread in a prepared 9" x 9" pan. Bake @ 350 F for 30 - 40 min. (or possibly slightly longer, as it took in my oven).
- Cold. Top with butter frosting or possibly better yet: cream cheese frosting.
- Note: When I make cakes such as this, I line the baking pan with foil, spray with Pam, then pour in the batter. After bakiing, I let the cake rest in the pan for 5 to 10 min, then lift out and onto a rack to cold. It is much easier to cut the cake proportionately and it frees up the cake pan for another use.
