  • 4 x 10 ounce swordfish, steaks
  • 1/4 c. lime, juice
  • 1 Tbsp. vegetable oil
  • 1 tsp chili pwdr
  • 1/4 tsp dry red pepper flakes
  • 1/4 tsp dry oregano
  •     Tomato Salsa
  • 2 x tomato, minced
  • 1 x red onion, minced
  • 1 x chili pepper, chopped
  • 2 Tbsp. extra virgin olive oil
  • 1 Tbsp. minced fresh basil, leaves
  • 1 Tbsp. fresh lemon, juice
  •     salt, to taste
  •     pepper, to taste

Directions

  1. Combine lime juice, oil, chili pwdr, warm pepper flakes and oregano. Add in fish to marinade and coat both sides. Chill covered for 1 hour.
  2. Prepare salsa.
  3. Grill fish and baste with marinade. Fish is done when flesh begins to flake.
  4. Serve with tomato salsa on side.
  5. Tomato Salsa:Add in all salsa ingredients and toss. Chill for 2 hrs.
