  • 1 med onion -- minced
  • 1/2 c. vegetable oil Juice of 1 lemon
  • 1/2 tsp chopped garlic
  • 1/4 tsp salt
  • 1/2 tsp grnd black pepper
  • 2 lb scallops

Directions

  1. Soak your skewers in water for at least 2 hrs before cooking.
  2. Combine first 6 ingredients in a large shallow dish. Add in scallops, stirring gently to coat; chill 2 hrs.
  3. Thread scallops on skewers. Place kabobs 4 to 5 inches from warm coals; grill 10 to 12 min, turning and basting occasionally with leftover marinade.
  4. serves 6
