Make Ahead Breakfast Egg Muffins Recipe

These little "muffins" are adapted from a Clean Eating Recipe, this recipe is for 30 egg muffins, make ahead for the week! You can mix and match your favorite veggies...These are perfect for a healthy on the go breakfast and the ingredients pack a healthy punch of morning nutrition!

Directions

  1. Preheat Oven to 450 degrees
  2. Line Muffin Pan with Aluminum Muffin Liners
  3. Mix all ingredients together (After cooking & Chopping) in large bowl.
  4. Add Salt and Pepper to taste
  5. Pour ingredients into muffin tins 3/4 full
  6. Bake 20 mins...depending on oven, may need to switch to Broil for additional 5 mins to light golden brown tops.
  7. To reheat- Microwave 30 secs per muffin, and you have a complete nutritious fast breakfast!

    Really great and healthful breakfast idea. However, I did find them to be a tad bland, despite seasoning the ground turkey fairly well. With five minutes left I "topped" the muffin with a bit of havarti and lots of salt and pepper. Next time I think I would mix in some salsa, add a lot more salt and pepper and maybe some hot sauce!
    I've cooked/tasted this recipe!

      Thank you for trying it! What I love about these is how versitile they are. The basic recipe I have listed here is made in way that keeps calories down, and is good for dieters. However, adding havarti, and whatever else to suit someones tastes, sounds awesome!
