Ingredients
- 1 1/2 pound calf liver, sliced & deveined
- 2 teaspoon baking soda
- 2 c. boiling water
- 1 c. lowfat milk
- 1 teaspoon garlic pwdr
- 2 teaspoon Creole seasoning
- 1 c. flour
- 1/2 c. oil
- 2 lg. onions, sliced
Directions
- Place liver in flat pan or possibly dish, sprinkle with soda, pour boiling water on liver and stir till well mixed. Let stand for 1 minute. Rinse liver in cool water, drain. Pour lowfat milk on liver, let soak 10 to 15 min.
- Mix flour, garlic pwdr and Creole seasoning in plate or possibly dish. Drain lowfat milk from liver, roll liver in flour. Brown quickly in warm oil, 2 to 3 min on each side. Remove from skillet, pour most of oil out, keep sufficient to saute/fry onions. When onions are clear, add in sufficient water to make gravy, add in liver.
- Cook covered for 15 min. Stir once or possibly twice if needed to keep from sticking. Serve on rice or possibly mashed potatoes.
