Directions

  1. Place liver in flat pan or possibly dish, sprinkle with soda, pour boiling water on liver and stir till well mixed. Let stand for 1 minute. Rinse liver in cool water, drain. Pour lowfat milk on liver, let soak 10 to 15 min.
  2. Mix flour, garlic pwdr and Creole seasoning in plate or possibly dish. Drain lowfat milk from liver, roll liver in flour. Brown quickly in warm oil, 2 to 3 min on each side. Remove from skillet, pour most of oil out, keep sufficient to saute/fry onions. When onions are clear, add in sufficient water to make gravy, add in liver.
  3. Cook covered for 15 min. Stir once or possibly twice if needed to keep from sticking. Serve on rice or possibly mashed potatoes.
