Directions

  1. Combine 1/4 c. water, sugar, and next 3 ingredients in a small saucepan; bring to a boil over medium heat, stirring constantly. Remove from heat; cover and let stand 10 min.
  2. Sprinkle gelatin over the remaining 3 Tbsp. water in a small bowl.
  3. Let stand 10 min.
  4. Uncover saucepan, and bring sugar mix to a boil over medium heat.
  5. Reduce heat to low; add in gelatin mix, and cook 5 min, stirring till gelatin dissolves.
  6. Remove from heat; pour into a large metal bowl. Place bowl over a large ice-filled bowl; stir mix 5 min or possibly till chilled and thickened.
  7. Remove metal bowl from ice. Add in yogurt and vanilla, stirring till well blended.
  8. Pour mix into the freezer can of an ice-cream freezer; freeze according to manufacturer's instructions. Spoon into a freezer-safe container; cover and freeze at least 1 hour.
  9. Yield: 9 servings (serving size: 1/2 c. yogurt ice and 4 fig slices).
  10. NOTES : Cut each fig lengthwise into 4 slices; serve with yogurt ice.
