Directions

  1. Heat soup with broccoli till broccoli is thawed. Cook carrots and onions in 1 Tbsp oil till lightly browned. Reduce heat to low. Add in 1/4 c. water and cover. Simmer till cooked, about 15 min. Remove to a bowl. In 3 Tbsp oil, cook mushrooms till moisture is gone. Stir in carrot mix.
  2. Mix cheeses and Large eggs. Set oven to 375F. Place 1 c. sauce in pan. Layer with 1/2 of noodles, 1/2 of cheese mix, all of carrot mix, 1/2 remaining sauce, remaining noodles, cheese and sauce. Cook for 45 min.
