  • 1/2 pt. strong tea
  • 1 pound mixed dry fruit
  • 6 ounce brown sugar
  • 1 egg, lightly beaten
  • 1 ounce butter, melted
  • 9 ounce plain flour
  • 1/2 level teaspoon bread soda

Directions

  1. Preheat oven (middle shelf gas) at 350 degrees. Use 2 lb loaf tin.Mix tea, fruit and sugar in bowl and leave overnight. Fold in beaten egg and melted butter. Mix in flour and bread soda. Place in greased tin (lined). Bake for 1 1/2 hrs approximately. Leave for 10 min in tin after cooking, turn out. Soak fruit the night before. Bread soda = baking soda.
