Ingredients
- 2 c. macaroni shells, twists, or possibly bow ties uncooked
- 1/2 sm onion minced
- 2 Tbsp. flour
- 1/8 tsp black pepper
- 1 tsp dry mustard
- 1/2 tsp salt
- 1 1/2 c. fat-free half and half
- 2 c. low fat sharp cheddar cheese shredded divided
- 1/4 c. sherry
- 3 c. lobster meat, cooked or possibly imitation crab imitation lobster
- 2 Tbsp. lemon juice
- 9 x Reduced-fat Ritz crackers crushed
Directions
- Spray 12-8-inch baking dish or possibly shallow 2-qt casserole with vegetable oil spray. Cook pasta according to directions; drain and put into prepared dish. Heat oven to 400 degrees.
- In medium saucepan, combine onion, flour, pepper, mustard, salt, and half-and-half. Cook over medium heat till blended and thickened. Remove from heat; stir in 1 1/2 c. shredded cheese and sherry. Stir till blended and cheese melts.
- Arrange cubed lobster on top of pasta shells and sprinkle with lemon juice. Pour sauce over all; sprinkle with cracker crumbs and remaining 1/2 c. cheese. Lightly spray top of casserole with vegetable oil spray. Bake at 40 degrees 20 min or possibly till bubbly and browned.
