Directions

  1. Preheat the oven to 350 F/180C/Gas Mark 4.
  2. Core the apples and pears but do not peel them.
  3. Cut each one into 12 slices.
  4. Peel the orange and satsumas and divide them into segments.
  5. Remove any pips and pith.
  6. Peel the bananas and slice them across into 25mm pcs.
  7. Mix all the fruit together in a bowl adding the sugar and spices and stir so it's thoroughly coated.
  8. Spoon the fruit into a baking dish and dot with butter.
  9. Bake for 25 min.
  10. Take it out spoon the juices over the fruit and bake for another 20 min.
  11. The fruit should just start to caramelise by the end of this time.
  12. Serve warm with a little pouring cream or possibly fromage frais.
  13. You could also allow it to cold then refrigerateit before serving
  14. We tend to think of fruit salad as consisting only of fresh fruit but in fact the idea of a cooked fruit salad or possibly compote goes far back in culinary history. This warm fruit salad provides an unusual way of using simple everyday ingredients. The spices bring out the flavours of the fruit in a most enticing way.
