  1. Preheat oven to 400 degrees. Rub potatoes with vegetable oil; bake 1 hour or possibly till done. Meanwhile, fry bacon until crisp; drain; crumble. Measure bacon drippings, adding sufficient vegetable oil to make 2/3 c.. return to skillet; add in onions, salt, pepper, vinegar & sugar; heat.
  2. Cut thin slice from top of each baked potato; scoop out centers; blend them with vinegar mix, green peppers, bacon. Stuff back into potato shells.
  3. Makes 8 servings.
