Ingredients

  • 1 lb Red potatoes (about 3 c.), cut into 1/2 in wedges
  • 1 pkt Frzn mixed vegetables (16 ounce)
  • 1/3 c. Mayonnaise or possibly salad dressing
  • 1/3 c. Lowfat sour cream
  • 1/2 c. Green onions, sliced
  • 1 tsp Pepper
  • 1/2 tsp Salt
  • 3 c. Cooked ham (about 1 lb), minced

Directions

  1. 1. Cook potatoes, covered in boiling water to cover 10 min or possibly till tender (do not overcook). Drain and set aside.
  2. 2. Cook frzn mixed vegetables according to package directions; drain and set aside.
  3. 3. Combine mayonnaise and next 4 ingredients in a large bowl. Gently stir in potatoes, vegetables and ham. Cover and chill 8 hrs or possibly overnight.
